T-shirt, jeans, sneakers, and yes, you can wear the hat. If it's too bright, take your sunglasses. But don't put them on unless she makes a comment about how bright it is. Offer her the sunglasses first, and if she declines them, don't put them on. It shows you can handle the brightness just like she can.
Holding her hand is fine. Just let her make the move first. Most girls scoot closer to the guy and take their hands. Other girls will drop their hands and expect the guy to take them. So wait for cues like that.
